What it is

Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. Navadhaniyam means nine grains, the set traditionally offered to the nine planets at the Navagraha shrine.

Here the idea goes into a batter. With several grains in one mix, the dosai come out brown and speckled, with more body and a deeper, toasted taste than a single-millet dosai. They are filling enough to make a meal with a chutney and a podi. Choosing between Native Food Store mixes? Navadhaniyam for a hearty mixed-grain dosai; thinai for a mild one; the multi millet ada mix for thick adai.

Tip: This batter thickens as it stands more than the others. Keep a cup of water by the stove and loosen it every few dosai.
