What it is
Naga began with Kollur Sreenivasan, a wheat flour trader who opened his first flour mill in Chennai in 1962. The company is now based in Dindigul, Tamil Nadu.
Sooji, or rava, is coarse semolina milled from wheat. This one is roasted twice, so it goes straight into the pan: the grains stay separate and upma comes out fluffy rather than pasty. It is also the rava for kesari, rava dosa and rava idli. Choosing between ravas? Sooji for upma and kesari; samba wheat rava for a coarser, nuttier upma; idli rava is rice, and only for idli.
Tip: Rain the rava into boiling water with one hand while stirring with the other. Tip it in all at once and it lumps.
Goes well with: Udhaiyam Chana Dal, Heera Cashew Nuts, GRB Pure Ghee
