What it is

Basmati is the long, fragrant rice of the Himalayan foothills and the plains below them, grown across Punjab, Haryana and the neighbouring states. XXXL is the grade name for extra-long grains, the kind that stretch as they cook.

Cooked properly, it smells of basmati the moment the lid comes off, and the grains stay long and separate, which is what you want layered in a biryani or tossed with ghee and whole spices. Choosing between rice? Basmati for North Indian biryani and pulao, seeraga samba for Dindigul and Ambur-style biryani, sona masoori for everyday meals.

Tip: Soak for 30 minutes, no longer. Over-soaked basmati breaks when you drain it.
