What it is

A rusk is bread baked once, sliced, and baked again until it is dry the whole way through. That second bake is what lets it go into a hot cup and come out in one piece. Karachi Bakery has been baking in Hyderabad since 1953, when Khanchand Ramnani opened it.

This one has cumin worked through the dough, so it turns faintly savoury against a sweet cup of chai. Choosing between them? Jeera rusk for the cumin, wheat rusk for plain, and the Osmania biscuit if you would rather have the salt and sugar without dunking anything.

Tip: Three seconds in and straight back out. Any longer and the bottom half stays behind in the tumbler.
