What it is

Karachi Bakery was started in Hyderabad in 1953 by Khanchand Ramnani, who had moved there from Karachi after the 1947 partition and named the shop after the city he had left. The first one opened in Moazzam Jahi Market, and the business now runs from Banjara Hills.

The almond biscuit is short and crumbly rather than hard, sweet without being heavy, with pieces of almond right through the dough. Choosing between the Karachi biscuits? Almond for the nut and the crumble, fruit for the candied tutti frutti, and Osmania for the salty-sweet one made for chai.

Tip: Keep the box off the windowsill. In a Dublin kitchen it is damp rather than heat that takes the snap out of them.
