What it is

Bhel is assembled rather than cooked, which is why it belongs to a cart and a crowd: the man in front of you does the whole thing in about twenty seconds and hands it over in a paper cone. This pack carries the dry half of that job, with the puffed rice, sev and peanuts already together.

The rest happens at the last second, onion and tomato and coriander and a spoon of chutney, and then it has to be eaten. Choosing between the bhels? This one for mixing wet at the table, suki bhel for eating dry out of the bag, and misal farsan for spooning over a bowl of usal.

Tip: Mix only what the bowl in front of you will finish. The second helping is worth mixing fresh.
