What it is

Heera is the main brand of P&B (Foods) Ltd, a Bradford-based company that describes itself as one of the largest independent wholesale distributors of Asian foods across Britain and Europe. This bag is sona masoori, the light, medium-grain rice of Andhra Pradesh, Telangana and Karnataka.

It cooks soft and white with the grains mostly separate, and it has little aroma of its own, so the sambar and rasam lead. Choosing between everyday rice? Sona masoori for light plate rice; ponni boiled for firmer Tamil grains; idli rice for batter only.

Tip: Rinse until the water runs nearly clear. Sona masoori clumps if the surface starch stays on.
