What it is
The Grand Sweets and Snacks was started in 1982 in Gandhi Nagar, Adyar, Chennai, by first-generation entrepreneur G. Natarajan. The shop is famous for handing out its akkaravadisal free to customers as prasadam.
Vallarai is a small, round-leafed green. Here it is cooked down with tamarind, chilli and gingelly oil into a thokku that is sharp, grassy and a little bitter. It is an acquired taste, and the people who like it really like it. Choosing between Grand Sweets thokkus? Vallarai for sharp and grassy; murungai keerai for milder and earthier; kadamba for a mix of vegetables.
Tip: Start with half a teaspoon beside the rice, not stirred through. It is stronger than it looks.
Goes well with: Nala Maharaja Wood Pressed Sesame Oil, SMS Rice Onion Vadam, Grand Sweets Kadamba Thokku
