What it is

The Grand Sweets and Snacks was started in 1982 in Gandhi Nagar, Adyar, Chennai, by first-generation entrepreneur G. Natarajan. The shop is famous for handing out its akkaravadisal free to customers as prasadam.

Murungai keerai is the small drumstick leaf, here cooked right down with tamarind, chilli and gingelly oil until it is thick and dark green. It is bitter-green and salty, so a teaspoon goes a long way. Choosing between Grand Sweets thokkus? Murungai keerai for green and earthy; vallarai for sharper; vathakuzhambu thokku for dark and sour.

Tip: Mash a teaspoon into curd rice with your fingers until the rice turns pale green.
