What it is

Anil was founded in 1984 and started out making roasted vermicelli; flours like this one came later. Murukku flour saves the long part of Deepavali bakshanam: washing, drying and grinding the rice and dal yourself.

Add salt, a spoon of butter and water, and you have a firm dough ready for the mould. Sesame or ajwain go in for the flavour your family knows best. Fried on medium, it comes out pale and crunchy. Choosing between? Anil Murukku Flour for home-pressed murukku; Anil Rice Flour if you like to blend your own; A2B Butter Murukku if there is no time to fry at all.

Tip: Keep the dough you are not pressing under a damp cloth. If it dries out, the murukku cracks in the press.
