What it is

SMS appalams and vadams are made by Shree Mahalakshmi Stores in Chennai, Tamil Nadu. Elai means leaf: traditionally, rice batter is spread thin on banana leaves, steamed for a minute, then peeled off and dried into sheets.

In hot oil the dried pieces puff in seconds into thin, white, very crisp wafers with a clean rice taste, loud enough to hear across the table. This is the plain one. Choosing between? Elai Vadam Plain for a mild crunch; Elai Vadam Karam for chilli heat; SMS Rice Onion Vadam for onion flavour.
