What it is

SMS appalams and vadams are made by Shree Mahalakshmi Stores in Chennai, Tamil Nadu. Elai means leaf: traditionally, rice batter is spread thin on banana leaves, steamed briefly, then peeled off and dried into sheets.

This is the karam one, with chilli in the batter. In hot oil the pieces puff in seconds into thin, crisp wafers with a clean rice taste and a spicy finish. Choosing between vadams?
