What it is

Daawat comes from LT Foods, a family business founded by Raghunath Arora in the Amritsar basmati-growing belt of Punjab, and this 10 kg bag is its organic chakki atta.

Chakki atta is whole wheat flour ground in a chakki, the traditional flour mill, so the bran stays in. It drinks a little more water than a roller-milled flour, and the dough turns soft and pliable, with that slightly nutty, whole-wheat taste of rotis at home. Choosing between flours? Chakki atta for rotis and parathas; multigrain atta for a heavier, mixed-grain roti; besan for pakoras and kadhi.

Tip: Knead with warm water and a pinch of salt, then leave it covered for 20 minutes. The rotis roll out without shrinking back.
