What it is

Cookd is a Chennai brand founded in 2020 by Aathitiyan V.S. It started as a digital-first brand built on chef-led recipe videos before launching biryani kits, masalas and cooking pastes.

Ambur biryani comes from the town of Ambur in the north of Tamil Nadu. It is made with short seeraga samba rice rather than basmati, and it is red with chilli and ginger-garlic rather than heavy with whole spices. One pack makes about 1.3 kg of biryani. Choosing between biryani kits? Ambur for medium heat and short grain; Hyderabadi for long-grain basmati; Dindigul for sharper pepper.

Tip: Let the cooker's pressure drop by itself for the full ten minutes. Opening early leaves the rice wet.
