What it is

Chitale Bandhu's story starts with a dairy that B.G. Chitale set up in 1939; his sons Raghunath and Narsinha opened Chitale Bandhu Mithaiwale in Pune in 1950. The famous bakarwadi followed in 1970.

Patal means thin, and this chivda uses the thin, papery poha that crisps up light rather than hard. Rice flakes make up almost 60% of it, tossed with peanuts, roasted coconut slices, curry leaves, green chilli, sesame, amchur and a little powdered sugar, so it is salty, tangy and faintly sweet at once. Choosing between Chitale chivdas? Patal poha for light and classic; potato chivda for crisp potato sticks; cornflakes chivda for bigger, louder flakes.

Tip: Shake the packet before opening. The peanuts and coconut sink to the bottom, and the first bowl deserves some.
