What it is

Ching's Secret was launched in 1996 by Ajay Gupta's Capital Foods in Mumbai, and the brand is best known for "Desi Chinese": Indo-Chinese sauces, chutneys, masalas and noodles. It is now part of Tata Consumer Products.

These are the plain noodles, with no sachet and no seasoning, so you build the dish yourself. Boiled, rinsed and tossed on high heat, they stay springy and take on whatever goes into the pan: cabbage, capsicum, spring onion and a Ching's masala. Choosing between Ching's noodles? Hakka for your own stir fry; the 60 g instant packs when you want a two-minute bowl with its own tastemaker.

Tip: Toss the drained noodles with a teaspoon of oil before they cool. They stay loose when they hit the pan.
