What it is

Ching's Secret was launched in Mumbai in 1996 by Ajay Gupta's Capital Foods, and it is the brand best known for Desi Chinese sauces, chutneys, masalas and noodles. It is now part of Tata Consumer Products.

Veg Manchurian is grated vegetables, mostly cabbage and carrot, bound into small balls, fried, then simmered in a dark, spicy, garlicky sauce. The sachet seasons both the balls and the gravy, so one packet does the whole dish. Choosing between Ching's masalas? Veg Manchurian for vegetable balls in gravy; Chilli Paneer for paneer; Chicken Chilli for chicken.

Tip: Squeeze the grated cabbage hard in a clean cloth before binding. Wet vegetables make balls that fall apart in the oil.
