What it is
Ching's Secret was launched in Mumbai in 1996 by Ajay Gupta's Capital Foods. It is best known for "Desi Chinese": the Indo-Chinese sauces, masalas and noodles that Indian homes and street carts made their own. The brand is now part of Tata Consumer Products.
Schezwan is the hot one. Each 60 g cake of instant noodles comes with its own tastemaker sachet, and the chilli does most of the work, with that garlicky Indo-Chinese edge. Choosing between Ching's instant noodles? Schezwan for heat; Manchurian for the classic Indo-Chinese taste; Singapore curry for milder and more fragrant.
Tip: Crack an egg into the pan once the water is nearly gone and stir hard. It turns into egg noodles in a minute.
Goes well with: Ching's Manchurian Noodles, Ching's Chilli Paneer Masala, Ching's Veg Manchurian Masala
