What it is

Ashok Chheda began Chheda Specialities Foods in Mumbai in 1993, and the company was formally set up in 2005. Banana chips came first; namkeens like this one followed, made at the Manor and Wada units in Palghar district.

Dry kachori is the keeping kind rather than the hot one lifted out of a pan: small fried shells with a dry spiced filling of moong dal, fennel, coriander, chilli and asafoetida. They sit in a tin and come out at tea. Choosing between the Chheda's snacks? Kachori when tea needs something filling, banana wafers for crunch, long masala wafers for chaat flavour.

Tip: A minute in a dry pan brings them back if they have gone soft. Let them cool before the lid goes on.
