What it is

Chheda Specialities Foods is a Mumbai company. Ashok Chheda began the business in 1993 and the company itself was set up in 2005, starting with banana chips and going on to potato chips, namkeens and other savoury snacks, from units at Manor and Wada in Palghar district.

Raw banana is sliced into rounds and fried, then salted and peppered, so the salt lands first and the pepper follows a second behind. They are thicker and sturdier than a potato crisp, which is why the bowl empties faster than expected. Choosing between the Chheda's wafers? Salt and pepper for the sharper one, yellow for plain salted, long masala for chaat spice.

Tip: Tip the packet into a tin the minute it is opened. A half-folded packet on an Irish worktop is soft by morning.
