What it is

Pacha karpooram is the camphor that goes into food, and only in tiny amounts: a pinch in payasam, kesari, laddu or sweet pongal gives that temple-prasadam smell. It is not the same as the white camphor tablets lit for aarti, which are never for eating.

It comes as small, crumbly crystals with a sharp, clean smell that carries through a whole pot. Too much takes over the dish, so it is used almost like a spice you can barely see. Choosing between camphors? Pacha karpooram for sweets and prasadam; Natraj camphor for lighting at the aarti; green cardamom when you want a softer sweet fragrance.

Tip: Keep the crystals twisted in a bit of paper inside a small jar. Left loose, the smell fades and spreads into everything nearby.
