Sugar candy, also called kalkandu (Tamil) · kalkandam (Malayalam) · kallu sakkare (Kannada) · patika bellam (Telugu) · mishri (Hindi) · khadisakhar (Marathi) · khadi sakar (Gujarati) · misri (Punjabi) · michri (Bengali).
What it is
Kalkandu, mishri in Hindi, is sugar crystallised slowly into clear, hard lumps. It is the sugar of the pooja plate, handed out as prasadam and stirred into sakkarai pongal and kalkandu sadam.
These are the small crystals: clean, sweet with no other taste, and slow to dissolve, so they crunch in the mouth. The small size is easier to measure into milk or pongal than big lumps. Choosing between sweeteners? Kalkandu for pooja and prasadam; Sri Durga Palm Sugar Candy for a darker, caramel taste; Native Food Store Jaggery Powder for everyday cooking.
Tip: For kalkandu sadam, melt the crystals in hot milk first, then add to the cooked rice with ghee and cardamom.
Goes well with: Heera Spanish Saffron, Swaad Green Cardamom, Natraj Camphor
