What it is

Gram flour laddu, made and packed ready to eat rather than as a mix. Bikaji are a Bikaner house and this is the plainest thing they make: no nuts pressed into the top, no silver leaf, just the gram flour.

A besan laddu is judged on whether the flour tastes cooked through or raw, and on whether it crumbles or holds. Choosing between the laddu? Bikaji for the plain Bikaneri style, Laxminarayan besan laddu for a Maharashtrian version, and the Bikaji gulab jamun tin where you want something to serve warm instead.

Tip: Take them out of the fridge an hour before serving. Cold besan laddu tastes of nothing at all.
