What it is

Kara sev is gram flour and rice flour pressed into short thick strands, and the heat here comes from black pepper at four percent rather than from chilli. That is the Chettinad way round and it tastes completely different.

Pepper gives a warmth that sits at the back of the throat instead of the sharp front-of-mouth burn chilli gives. Choosing between the sev? Kara sev for pepper and thickness, ribbon pakoda for wider flatter ribbons, mixture when you want several textures in one bowl.

Tip: Scatter it over curd rice or lemon rice at the table, not in the kitchen. It softens within a minute.
