What it is

A mixture is judged on how many textures survive in the same bag. This one runs to twelve declared ingredients: gram flour strands, rice flakes, roasted chickpeas, roasted peanuts and fried curry leaves, held together with chilli, pepper and turmeric.

Rice flakes are the part that goes first if the pack is left open, because they are the thinnest thing in there. Choosing between the mixtures? Classic for the everyday bowl, kara boondi when you want only the drops, masala kadalai when you want only the peanuts.

Tip: Serve it in a wide shallow bowl. In a deep one everybody digs for the peanuts and the poha ends up at the bottom.
