777 takes its name from the licence number the business was given under India's Fruit Products Order, and its roots go back to a Madras hotel opened in 1933. This onion pickle is cured in oil with chilli and spice, and it is one of the hotter jars on the shelf.

A little goes a long way. The heat cuts straight through cool curd rice or a plate of dal rice, which is exactly where it belongs. Choosing between pickles? Onion for heat, lime for sour and salty, mango ginger for crisp and fresh.
