What it is

Chicken 65 is the deep-red fried chicken of Chennai hotel menus and party starters: bite-sized pieces coated in a spiced marinade, deep fried and tossed with curry leaves and green chilli. Nobody quite agrees on where the name came from, and nobody much minds.

This masala is the marinade base, so you only add curd, ginger-garlic and a little cornflour for crunch. The same mix works on cauliflower or paneer when someone at the table skips meat. Choosing between Annapoorna masalas? Chicken 65 for a crisp fried starter; Chettinad Pepper Chicken for a dry pepper fry; Fish Fry Masala for a shallow-fried coating.
