What it is

Rice flour prepared for the idiyappam press, so it takes boiling water straight away and comes together as a dough you can squeeze while it is still hot. Cold or warm water will not bind it, and no amount of kneading will rescue a dough mixed with water off the boil.

The dough has to be worked fast, because it stiffens as it cools and then the press fights you. Choosing between the Anil flours? String hopper flour for idiyappam, kozhukattai flour for the steamed dumpling casing, and plain rice flour for murukku and batter.

Tip: Boiling water, not hot from the tap, and mix it in with the handle of a spoon before your hands go near it.
