What it is
Aachi Masala was founded in 1995 by A.D. Padmasingh Isaac and is headquartered in Chennai, Tamil Nadu. Its kits put the rice and masala for one biryani in a single box.
This one holds seeraga samba, the tiny cumin-shaped rice of Tamil Nadu, with a masala of coriander, chilli, black pepper and fennel, plus cinnamon, clove, cardamom and bay leaf. Dindigul biryani is peppery rather than chilli-hot, and the small grain soaks up the masala instead of sitting apart from it. Choosing between Aachi biryani kits? Dindigul for seeraga samba and pepper; Chettinad for long basmati; Aachi Sri Lankan biryani masala if you bring your own rice.
Tip: Seeraga samba turns mushy if over-watered. Measure the water on the pack exactly and don't top it up.
Goes well with: GRB Pure Ghee, Heera Black Pepper Whole, Heera Cashew Nuts
