What it is
Aachi Masala was founded in 1995 by A.D. Padmasingh Isaac in Chennai, and today it sends its spice blends to more than 30 countries. This box puts the rice and the masala for one biryani together.
Inside is basmati rice and a Chettinad masala of coriander, chilli, black pepper and fennel, with cinnamon, clove, cardamom and bay leaf. Chettinad cooking leans on pepper and fennel, so the biryani comes out darker and more peppery than a Hyderabadi one. Choosing between biryani kits? Aachi Chettinad for long basmati grains; Aachi Dindigul for small seeraga samba; Cookd Dindigul biryani paste if you have your own rice.
Tip: Fry the masala in the oil for a minute before the yogurt goes in. Raw masala stirred into yogurt tastes dusty.
Goes well with: Shan Fried Onion, Shan Ginger Garlic Paste, Amul Ghee
