What it is

A2B's founder, K.S. Thirupathi Raja, started out making sweets in Rajapalayam, and the Adyar Ananda Bhavan name comes from its outlet in Adyar, Chennai. Mullu means thorn in Tamil, and mullu murukku is the spiky one.

It is traditionally made from rice flour with a little dal flour, pressed through a thorned mould into coils and fried until crisp. Every ridge crunches, louder than a plain murukku. Choosing between murukkus? Mullu for spiky and loud; butter murukku for richer and gentler; A2B hand murukku for the big twisted festival one.

Tip: Break the coils in half before they go into the tin. They pack tighter and stay crisp longer.
