777 grew from Hotel Sri Rama Bhavan, opened in 1933 on Thambu Chetty Street in Madras by brothers R.S. Narayanasamy Iyer and R.S. Ganapathy Iyer. Mixed pickle is the jar for people who can never decide: several vegetables and fruits cured together in one jar with oil and spice.

Every spoon is a little different, sour one bite and hot the next. It goes with nearly anything, from chapati to biryani. Choosing between pickles? Mixed for a bit of everything, gongura for Andhra sourness, garlic for a deeper, savoury heat.

Tip: Stir the jar from the bottom before serving. The spice settles and the top pieces dry out.
