What it is
Pillsbury atta launched in India in 1996 and is sold there by General Mills. For many families it is simply the bag the chapati flour came in.
Atta is the flour for everyday rotis: knead it soft, rest it, roll it thin, and it puffs on a hot tawa. A 5 kg bag keeps a family in chapatis for a good few weeks. Choosing between attas? Pillsbury for the everyday bag; Aashirvaad Chakki Atta if that is the one your family always bought; Sohum Lokwan Atta, made from Lokwan wheat, for the Maharashtrian favourite.
Tip: On cold Irish days, knead with warm water and a spoon of oil. The dough relaxes faster and rolls thinner.
Goes well with: Heera Butter Ghee, Udhaiyam Masoor Dal, 777 Mixed Pickle
