What it is

SMS appalams and vadams are made by Shree Mahalakshmi Stores in Chennai, Tamil Nadu. Veppampoo is the tiny flower of the neem tree, dried and kept for the start of the Tamil and Telugu new year.

On Puthandu and Ugadi it goes into the pachadi that mixes every taste on one spoon: bitter neem flower, sweet jaggery, sour tamarind and raw mango, with salt and chilli. Fried in ghee it is also stirred into rasam. It is strongly bitter, so a little goes a long way. Choosing a pachadi base? Veppampoo for the bitter note, jaggery cubes for the sweet, tamarind for the sour.

Tip: Fry it only until it turns a shade darker. Burnt neem flower turns harsh.
