What it is

Dindigul biryani is the one Tamil Nadu drives out of its way for: short seeraga samba rice, cooked with the meat in a sharp masala of green chilli, mint and spices. This Veerah paste is the whole masala in one pouch.

It is made from groundnut oil, onion, ginger, garlic, spices, salt, green chilli, chilli powder, mint, coriander leaves and lemon juice, ground to a thick paste. You add the meat, rice and ghee. Choosing between biryani kits? Dindigul for sharp and peppery; Ambur for milder and red; Hyderabadi for long-grain basmati.

Tip: Use seeraga samba, not basmati. The short grain soaks up the masala the way it does in Dindigul.
