What it is

Town Bus is the snack line of GRB, the ghee maker that G.R. Balasubramaniam started in 1984 by delivering butter on a bicycle around Bengaluru. The snacks are made near Madurai.

Bombay mixture is gentler than the Madras kind: rice-flour and gram-flour bits, masoor dal, melon seeds and cashews, seasoned with pepper, dry ginger, a little sugar and warm whole spices like cinnamon, clove and nutmeg. It finishes sweet-spiced rather than chilli-hot. Choosing between Town Bus mixtures? Bombay for mild and warm; Madras for peppery heat; garlic for the boldest of the three.
