What it is

Tilda was founded in 1972 by Rashmi Thakrar, who came to Britain after the expulsion of Asians from Uganda. The company is based in Rainham, England, and has been part of Spain's Ebro Foods since 2019.

The grains are long and slim with that basmati smell, and after a soak they grow long rather than fat and stay separate on the plate. Ten kilos is the size for a house where pulao or biryani comes round every week, or where the parties are big. Choosing between rices? Tilda basmati for pulao and jeera rice; seeraga samba for Dindigul or Ambur biryani; sona masoori for everyday rice and sambar.

Tip: Soak it for a full 30 minutes before cooking. The grains lengthen more and break less.
