Nigella seeds, also called karunjeeragam (Tamil) · karinjeerakam (Malayalam) · nalla jeelakarra (Telugu) · kalonji (Hindi, Marathi, Gujarati, Punjabi) · kalo jeere (Bengali).
What it is
Kalonji, karunjeeragam in Tamil, is the small black seed of the nigella plant. It is often sold as onion seed, though it has nothing to do with onions. It is scattered over naan, fried into Bengali dal and vegetables, and mixed into North Indian pickles; it is also one of the five seeds in panch phoron.
It is slightly bitter and peppery, with a faint oniony note, and needs a moment in hot oil to wake up. Choosing between small seeds? Kalonji for naan and pickles; Swaad Ajwain Seeds for paratha and pakoda; cumin for everyday tempering.
Tip: For your own panch phoron, mix equal parts kalonji, cumin, fennel, fenugreek and mustard seeds.
Goes well with: Heera Moong Dal Washed, Swaad Fenugreek Seeds (Methi), Aashirvaad Chakki Atta
