What it is

Rava laddu is the quick laddu of South Indian homes. Rava is roasted in ghee until it smells nutty, mixed with sugar, cardamom and fried cashews, and pressed into balls while still warm. It needs no long stirring over the stove, which is why it turns up whenever a sweet is needed fast.

A good rava laddu is soft and a little grainy, fragrant with cardamom, and breaks cleanly in the hand. Choosing between laddus? Rava for light and grainy; Suswaad pasi paruppu laddu for the roasted taste of moong; Laxminarayan besan laddu for richer and denser.

Tip: Warm one for five seconds in the microwave before serving with coffee. The ghee softens and it tastes just made.
