Sona Masoori rice, also called sona masoori arisi (Tamil) · sona masuri akki (Kannada) · sona masoori biyyam (Telugu) · sona masoori chawal (Hindi).
What it is
Sona masoori is a medium-grain rice grown mainly in Andhra Pradesh, Telangana and Karnataka, and it is the everyday rice in a lot of South Indian homes. It is lighter and slimmer than ponni, and cooks up soft, with grains that stay mostly separate.
This is the rice for a weekday plate: sambar poured over the first mound, rasam over the second, curd rice to finish. A 10 kg bag sees most families through the month. Choosing between rices? Sona masoori for light, everyday meals; ponni boiled rice for firmer grains that hold their shape; basmati for biryani and pulao.
Tip: Rest the cooked rice for five minutes before opening the cooker. The grains firm up and stop sticking to the ladle.
Goes well with: Udhaiyam Toor Dal, 777 Madras Sambar Powder, 777 Madras Rasam Powder
