What it is

Rooh Afza was created in 1906 by Hakim Hafiz Abdul Majeed, the founder of Hamdard. The name is often translated as "soul refresher", and it is a rose-coloured concentrated syrup that turns up on tables across South Asia every summer and every Ramadan.

A few spoons turn a glass of cold milk pink and fragrant, or a jug of water into sharbat for the whole table. It is sweet and floral, so a little goes a long way. Choosing a syrup? Rooh Afza for rose milk and falooda, 777 rose sarbath for a lighter rose drink, kokum syrup for a sharp, tangy one.

Tip: Stir it into the milk before the ice goes in. Poured over ice, the syrup sinks and sets in a layer at the bottom.
