What it is

Prestige is the flagship brand of TTK Prestige, part of the TTK Group founded in 1928 by T.T. Krishnamachari. The appa chatti is one of those shapes that only makes sense in an Indian kitchen: deep, round at the bottom and steep at the sides, so a ladle of batter can be swirled once and then left alone.

That single swirl is what gives appam its thin lacy edge and its thick soft middle, and a flat pan cannot do it. Choosing between the pans? The appa chatti for appam and neyyappam, a paniyaram pan for small round kuzhi paniyaram, a flat tawa for dosai and uthappam.

Tip: Swirl once and stop. A second swirl thickens the rim and the lace is gone.
