What it is

Poongar is one of the traditional rice varieties of Tamil Nadu, a red rice with a medium grain. It is cooked as plain rice for sambar and kuzhambu, or thinned into kanji with a little salt, the way the older generation ate it every day.

Cooked, it is firm with a faintly sweet finish, and at its best with a wet kuzhambu or sambar poured over. Choosing between red rices? Poongar for everyday plain rice; Natures Kullakar Rice for idli and dosa batter; Natures Maapilai Samba Rice for more chew.

Tip: Leave the cooker closed for ten minutes after the pressure drops. Red rice finishes softening in its own steam.
