What it is

Nel pori is made by puffing whole paddy in a hot pan, traditionally in hot sand, so the odd bit of husk is part of it. It is the pori of Karthigai Deepam, mixed with jaggery syrup and set out with the lamps, and the pori offered into the fire at Tamil weddings.

It is lighter and more delicate than regular puffed rice, with a toasty, slightly nutty taste. Choosing between pori? Nel pori for Karthigai and pooja; Natures Puffed Rice 500g for bhel and everyday snacking; Laxminarayan Rice Flakes for aval upma.

Tip: Pick out any stray husk before making urundai. It is fine in a snack but catches in a sweet.
