What it is

Kullakar is a red rice grown in Tamil Nadu, one of the traditional varieties coming back into home kitchens. Besides plain rice, it goes into idli and dosa batter, idiyappam and kanji, much as white rice would.

The grain is reddish with a nutty taste and keeps its bite, so it suits a wet kuzhambu or sambar more than a dry poriyal. In batter it gives a pinkish idli with more body. Choosing between red rices? Kullakar for batter and everyday rice; Natures Poongar Rice for plain rice with sambar; Natures Maapilai Samba Rice for the chewiest grain.
