What it is

Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. Varagu is kodo millet, a firmer, darker grain that some Tamil villages still cook like rice.

Kodo millet gives the dosai a little more bite than most. They hold their shape, crisp well at the edges and keep well in a packed lunch, folded around a smear of podi and oil. Choosing between Native Food Store varagu products? The dosa mix for dosai; varagu noodles for a quick dinner; samai dosa mix for a thinner, finer dosai.

Tip: For the lunch box, spread podi and oil on the dosai while it is still on the tawa, fold it and let it cool before packing.
