What it is

Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products.

Nattu sakkarai is sugarcane juice boiled down and left as a fine, golden-brown powder instead of being set into blocks. It dissolves straight into a hot tumbler, with none of the chipping a jaggery block needs, and brings a caramel, slightly earthy sweetness. Choosing between jaggeries? Country sugar powder for coffee and quick sweets; jaggery balls for pongal and payasam made the old way; palm jaggery (karupatti) for a darker, smokier taste.

Tip: In payasam, add it off the heat once the milk has cooled a little, so the milk does not split.
