What it is

This is groundnut oil pressed the old way, in a wooden chekku, instead of being extracted and refined in a factory. That is why it smells of roasted peanuts when you open the bottle, and why the colour is a deeper gold.

It is heavier and sweeter than refined oil, so a little goes further. Use it for everyday frying, tempering and curries, and for a batch of vadai or bajji on a wet evening. Choosing between groundnut oils? Nala Maharaja or Native Food Store for the wood-pressed taste; Idhayam Mantra for a milder everyday frying oil.

Tip: Use about a quarter less than your usual refined oil in a poriyal. The flavour does the rest.
