Broken wheat, also called godhumai ravai / samba ravai (Tamil) · gothambu nurukku (Malayalam) · godhi rave (Kannada) · godhuma ravva (Telugu) · dalia (Hindi, Punjabi, Bengali) · daliya (Marathi) · fada (Gujarati).
What it is
Naga's founder, Kollur Sreenivasan, began as a wheat flour trader and opened his first flour mill in Chennai in 1962. Naga Limited is now based in Dindigul, Tamil Nadu. This is samba wheat cracked into coarse pieces, the samba rava or godhumai ravai of Tamil kitchens.
It is coarser and chewier than sooji, with a nutty smell once roasted, and it keeps its bite rather than going soft. Choosing between ravas? Samba rava for a grainy, filling upma; double-roasted sooji for soft upma and kesari; kambu millet rava for a darker, earthier upma.
Tip: Roast it until it smells like toast before the water goes in. Unroasted, it turns sticky.
Goes well with: Heera Black Mustard Seeds, Udhaiyam Chana Dal, GRB Pure Ghee
