What it is

MTR traces its roots to the Mavalli Tiffin Room restaurant, opened in Bengaluru in 1924 by Yagnanarayana Maiya. MTR Foods is headquartered in Bengaluru and makes ready-to-eat meals, breakfast mixes and masalas.

This mix skips the soaking, grinding and overnight wait. Stir it with water, rest it for a quarter of an hour, and it pours and spreads like ordinary batter. The dosai come out a little darker and more speckled than plain ones, soft in the middle and crisp where the oil catches. Choosing between dosa mixes? MTR multigrain for a quick mixed-grain dosai; GRB ragi dosa mix for a dark ragi one; Native Food Store millet mixes for a single millet.

Tip: The first dosai is always the test one. Adjust the tawa heat and the batter thickness after it, not before.
